What are some good inexpensive recipes for Valentines Day?

Valentines Day is only two days away, I need a recipe that is absolutely delicious, not too expensive, and nothing too over the top. Any ideas?

CHICKEN ALFREDO

2 lbs boneless chicken breasts
4 tablespoons oil
1/4 cup butter
1/2 cup Parmesan cheese, grated
3/4 cup heavy cream
salt and pepper, to taste
1 lb fettucine

Heat oil in a 10 inch skillet. Cut chicken breast into strips. Add salt and pepper. Fry on medium heat until cooked through.

Sauce:

Melt butter in saucepan; add cream and cheese. cook over low heat, stirring constantly. Do not boil.
Cook fettucine in 3 quarts boiling water. Mix chicken and Alfredo sauce together. Drain noodles. Put sauce and chicken over noodles.

6 servings.

CHOCOLATE SILK PIE

1 unbaked single pie crust
1 cup semisweet chocolate chips
1/2 cup (1stick) butter
1 cup sugar
pinch of salt
1 tbsp unsweetened cocoa powder
3 eggs
2/3 cup evaporated milk
1 tsp vanilla

Preheat oven to 350 degrees.
In large, microwave-safe bowl, melt chocolate chips and butter at 50% power for 2 minutes until butter is melted; stir until smooth, Whisk in salt, sugar, cocoa powder, eggs, evaporated milk and vanilla extract, whisk until well blended. Pour chocolate mixture into crust.

Bake 30 minutes or until filling has puffed, but center still wiggles. Cool completely. Refrigerate until ready to serve. Garnish with whipped cream and chocolate shavings, if desired.

Notes: Try baking pie shell 8 minutes in preheated 350 degree oven before filling shell. I have used half Splenda and half sugar with good results.

    Cake Mix Cookies

    1 package cake mix — your favorite flavor
    2 eggs
    1/2 cup vegetable oil
    Choose up to 1 cup of any of the following to add.
    Chocolate, Butterscotch, or PNB chips
    chopped walnuts, pecans, or other nuts
    raisins, dates, or other dried fruit

    Preheat oven to 350ºF. In medium mixing bowl, stir together: cake mix, eggs, oil and any added extra ingredients. Drop by rounded spoonfuls onto ungreased
    cookie sheet. Bake for 10 minutes. Makes about 24 cookies.

    Find a cake or cookie recipe and cut it like a heart and then decorate it with pink, red, and white icing. With cake you can freeze it first and then trim it when it is not completely solid and not frozen, you should be able to just take it out. Cookies just get a regular sugar cookies recipe and then cut out hearts or trim it with a knife. Bake then ice them. You can buy a cake mix or cookie mix and then use that.

    Or you can look for a heart shaped cake pan, that should be 9-inches and buy a basic cake mix.

    Try your hand at a "japanese hibachi grill night"… it takes some work but is inexpensive. Rice, chicken, (and/or steak) shrimp, veggies, and the shrimp sauce. A great recipe for the shrimp sauce includes tomato paste, not ketchup. There are several websites that will give you all the recipes you’ll need. Plan a day ahead to make the shrimp sauce!

    VALENTINE’S DAY SPECIAL

    1 box Betty Crocker chocolate cake mix
    3 eggs
    1/3 c. oil
    1 (21 oz.) can cherry pie filling
    1 pkg. chocolate instant pudding made as for a pie filling

    Beat 3 eggs, add dry cake mix, oil, cherry pie filling. Mix carefully but do not overdo. Pour into greased 13 x 9 x 2 inch pan. Bake at 350 degrees for 30-35 minutes or until cake tester comes out clean. Cool thoroughly.

    Strawberry Cream Puffs with Strawberry Sauce is an old-fashioned dessert that is on the come back trail.

    INGREDIENTS
    – 3/4 cup water
    – 3 tablespoons unsalted butter, cut into pieces
    – 1/4 teaspoon salt
    – 1/4 teaspoon sugar
    – 3/4 cup all-purpose flour
    – 3 large eggs
    – 1 cup chilled whipping cream
    – 7 teaspoons sugar
    – 1/4 teaspoon kirsch (clear cherry brandy)
    – 1/8 teaspoon vanilla extract
    – 6 large strawberries, hulled
    – 2 pints strawberries, hulled
    – 3 tablespoons sugar
    – Powdered Sugar

    COOKING DIRECTIONS
    1. For cream puffs: Preheat oven to 375 degrees F. Line baking sheet with parchment paper. Combine water, butter, salt and sugar in heavy medium saucepan. Bring to boil, stirring to melt butter. Add flour; using wooden spoon, stir vigorously until mixture clumps together, forming ball. Stir 1 minute longer. Remove from heat. Transfer dough to medium bowl. Using electric mixer, add eggs 1 at time, beating until dough is smooth after each addition (dough will be slightly soft and shiny).

    2. Using 1 rounded tablespoon dough for each cream puff, spoon dough onto prepared baking sheet, spacing about 2 inches apart and forming mounds about 3/4 inch to 1 inch high and 1 1/4 inches in diameter. Using moist fingertips, gently press tops of cream puffs flatten any peaks. Bake until golden brown, about 37 minutes. Transfer baking sheet to rack; let cream puffs cool. (Can be made 4 hours ahead. Let stand at room temperature.)

    3. For filling: Beat cream, 1 teaspoon sugar, kirsch and vanilla in medium bowl until stiff peaks form. Combine 6 strawberries and 2 tablespoons sugar in small bowl. Using fork, crush berries. Fold crush strawberry mixture into cream.

    4. Cut top third off each cream puff. Place cream puff bottoms, cut side up, on plates. Spoon filling into bottoms, mounding slightly. Ladle sauce over, allowing sauce to spill onto plates. Top with cream puff tops. Dust with powdered sugar.

    5. For sauce: Puree 1 basket strawberries in processor. Transfer to bowl. Stir in sugar. Quarter remaining strawberries; add to sauce.

    Yield: 18 servings
